Coconut Rice Recipe

INGREDIENTS

2 CUPS OF THAI JASMINE RICE
2 CUPS OF COCONUT MILK
1 3/4 CUPS OF WATER
1/4 TSP SALT
1/2 TSP SUGAR

METHOD

PLACE ALL THE INGREDIENTS IN A POT OVER A MEDIUM TO HIGH HEAT, STIRRING OCCASIONALLY TO STOP THE RICE FROM STICKING. ONCE THE COCONUT-WATER STARTS TO BUBBLE, STOP STIRRING AND REDUCE THE HEAT TO LOW COVER WITH A TIGHT FITTING LID AND ALLOW TO SIMMER FOR 15 MINS OR UNTIL MOST OF THE LIQUID HAS BEEN ABSORBED. TURN OFF THE HEAT AND GENTLY STIR THE RICE THEN REPLACE THE LID AND ALLOW TO STEAM FOR ANOTHER 5 MINS. WHEN READY TO SERVE FLUFF THE RICE GENTLY WITH A FORK, TEST FOR SALT AND TRANSFER TO A SERVING BOWL.

*Note* We’ve been asked how to perfect this recipe as it can be a difficult one to master so here’s our cheats method:

Cook the rice separately
Put ricein a bowl with the coconut milk, salt and sugar, stir then microwave for about 1 1/2 mins or until hot
Stir/fluff up with a fork and serve
